It is in part biological. And because of the hard physical lifestyle and excellent diet they eat. Not good that diet for lazy people but just fine for the Amish. They have sound values and mental stability and a good outlook on life. Genetics probably superior to other groups too.

Amish will be among the three groups of predominant whitey population USA in 200 years. Mormons and Hasidic Jews the other groups.
